Chocolate Fondant
serves 4

ingredients:
50g butter plus extra to grease moulds
50g bittersweet chocolate (min 70%)
1 whole egg
1 egg yolk
60g caster sugar
50g flour

method:

1. pre-heat oven to 180c
2. Slowly melt butter and chocolate together over a low heat.
3. Wisk the eggs and sugar together until pale, then fold into the chocolate. Add the flour and fold in gently.
4. Spoon the mixture into moulds until 1cm from the top. Bake for 12 minutes only! (depending on how big the molds are)
5. Turn out very gently upside down onto warm plates.
6. Garnish with icing sugar.
7. serve with a berry coulis and ice cream.

berry coulis:

 1 cup mixed frozen berries
 2 tablespoons sugar

method:

1. on a low heat stir the berries and sugar until berries are soft and sugar has caramelised.
2. Once the berries are soft pour into a strainer and strain until there are only pips left in the strainer.

tips:

1. prepare ingredients before you melt the  butter and chocolate.
2. if you are making the fondants in cupcake moulds cook for only 8minutes, if you cook in muffin moulds cook for only 10 minutes, if you cook in a bigger mould cook for only 12 minutes.

I decided to make chocolate fondants because they looked yummy to make and simple. And best of all, the ingredients were what would normally be in the house. they also turned out really well (:
